

2 xícaras de arroz branco cozido
1 cenoura média ralada
½ xícara de pimentão vermelho picado
½ xícara de pimentão amarelo picado
½ xícara de milho verde
½ xícara de ervilha
¼ xícara de uvas-passas (opcional)
2 colheres (sopa) de azeite e ½ cebola picada.
Em uma panela, aqueça um fio de azeite e refogue a cebola até ficar transparente;
Adicione a cenoura ralada, os pimentões, o milho e a ervilha. Refogue por alguns minutos até os legumes ficarem macios;
Se desejar, acrescente as uvas-passas e misture bem;
Junte o arroz branco já cozido e mexa delicadamente até incorporar todos os ingredientes;
Ajuste o sal, finalize com mais um fio de azeite e sirva quente.
